Full Day of Eating

I have been sharing my Full Days of Eating (FDOE) on socials for years now, but I thought it would be fun to do a blog post to go more in depth on everything surrounding what a typical day of eating looks like, how I find balance in my diet and other meal ideas!

As a new mom, I fully understand how hard it can be to find the time to put together a well balanced meal or fit in lots of nutrient dense options. Everyday is different, and some days are better than others - but that’s just life! The two main things I try to always focus on within my diet are nutrient dense foods and balance. I do my best to fit in nutrient food options into my days as often as I can because that is what makes me FEEL the best and most energized to take on the day. I am also a strong believer that food it happiness and so I really focus on having a balanced diet and not restricting myself from eating the foods I love. I am a huge sweets gal, so I will always have dessert at the end of the day or snack on some candies throughout the day because that’s what makes me happy.

Now let’s get into what a typical day of eating looks like for me….

Breakfast “Appetizer” - Protein Pancakes and Coffee

If you’ve been following me for a while you know that I am OBSESSED with Vans protein waffles and pancakes. I’m not kidding when I tell you I have had these bad boys every single morning for yearssssssss! They are so easy to just throw in the microwave and hold me over while I give Dallas his bottle and get ready for the day. If you’re not a huge breakfast person (or just looking for something new) I highly recommend these because they don’t require much effort and are super simple but starts your day off with some protein! And of course, my morning is not complete without coffee. I have about 2-3 cups of coffee a day (#momlife) and this Chobani creamer is my absolute fave!

Breakfast - Eggs, Veggies and Kimchi

For breakfast I had two fried eggs with Siete’s jalapeno sauce, sautéed veggies with feta and kimchi! Recently I have been a big egg lover so I usually have eggs with some form of veggie! And then I have also been loving kimchi with breakfast. It’s super yummy but also so good for your gut so its a win win!
I’m also one of those crazy people that doesn’t believe in breakfast foods, so sometimes I’ll have shrimp or chicken and veggies for breakfast! Just do whatever sounds yummy to you!

Other breakfast options I love:
- Avocado toast with over easy eggs
- Meat and veggies omelet

Lunch - Crispy Chicken and Veggies

Home Chef has been a life saver recently and makes it so much easier to eat a well rounded diet, even when life gets crazy. For lunch I made their crispy chicken and maple mustard sauce with veggies and it was DELICIOUS. If you have a hard time finding motivation to cook for yourself, I highly recommend looking into Home Chef!! When I don’t have the time to cook myself lunch, I will usually just have leftovers that we keep in the fridge throughout the week to heat up for lunch!

My favorite things to meal prep for lunch:
- Ground turkey, shrimp or chicken
- Zucchini, bell peppers, spinach
- Sweet potatoes or rice

Mid-day Snack - Protein Bar and Turkey Stick

I had a Power Crunch bar and a CHOMPS turkey stick for a little snack before dinner! These are two of my go-to snacks when I need something to munch on (especially when I’m on the go). Like I mentioned earlier, some days I will snack more than others, but since I was able to make big meals throughout the day, today I just had a couple smaller snacks in the afternoon! I find it super helpful to get snacks that are high in protein because those will fill you up more than others!

Other snacks I’m loving:
- Annie’s cheddar puffs
- Fresh veggies (carrots, cucumber, snap peas)
- Tortilla chips
- Fruit snacks

Dinner - Homemade Chicken Noodle Soup & Sourdough

We had the coziest dinner and it was all homemade which just makes it so much better. Steve made his famous chicken noodle soup (I’ll have to share the recipe one of these days) and then we had some of the sourdough I made with it (which I’m very proud of by the way)!! It was so so yummy…there’s really nothing better than a good chicken noodle soup. And I always love to have my glass of wine at dinner…another thing that just makes me happy!

Other dinners we make consistently:
- Spaghetti squash with cherry tomatoes, feta, and parmesean (I have the
recipe here)
- Steak and veggies
- LOTS of Home Chef meals!

Dessert - Ice Cream Sandwich

I never go to bed without dessert and neither should you!! Dessert is good for the soul lol. I love a good dessert and will usually snack on a little candy during the day as well! But let me tell you…these ice cream sandwiches are BOMB!! I get them at Whole Foods and they have a couple different kinds that are super yummy too!

My other go-to desserts:

- Gushers

That wraps up my full day of eating!! I hope this was interesting and gives you some inspo for meals you could make at home. At the end of the day its really all about balance and making sure you are getting the nutrients you need to feel healthy and energized. Until next time!!
